Vino Sofía Cañizares Macabeo Chardonnay Moscatel

From the vineyards of Alto Vinalopó, growing on limestone soils that impart freshness and minerality, Sofía Cañizares Macabeo · Chardonnay · Moscatel is born. This wine blends the tradition of Macabeo and Moscatel, native Mediterranean varieties, with the international elegance of Chardonnay, creating a unique expression of this D.O.P. Alicante terroir.

Each variety is harvested at its optimal ripeness, following a staggered process that preserves the essence of each grape. Chardonnay, cultivated in sandy soils, is the first to be picked. Shortly after, Macabeo and Moscatel, which share limestone terrain, are incorporated into the harvest, ensuring that each variety contributes its best qualities to the final blend.

Winemaking: Minimal Intervention, Maximum Expression

Vinification begins with fermentation in stainless steel tanks, using native yeasts to extract the pure primary aromas of each variety.

After a meticulous selection process, Macabeo takes the leading role in the blend, while Chardonnay and Moscatel add balance, complexity, and a refined texture. Finally, the wine is aged for two months on fine lees in small 3,000-liter porous concrete tanks, enhancing its structure, creaminess, and depth, without sacrificing freshness
