Winemaking
Harvest and manual selection. Long natural fermentation in wooden vats or French oak foudres at controlled temperature, followed by aging on fine lees for three months.
Gastronomy
Ray in caldeirada, seafood rice, grilled chicken, lightly aged cheeses.
