It is one of the most aromatic varieties in the world. 

200 Hectares of difficult land, slate farm, not very fertile and demanding, but who knows how to take care of the plant. Not receiving enough water, the vine struggles to survive and tries to find it itself, gives little, but the best of it. In this way the grape will tell us with its aromas where it is planted. It is the mystique of "the essence".

AN AVANT-GARDE WINERY

It was not easy to find the terroir where to make the kind of wines we dreamed of from the beginning. A land that would force the best out of each vine and that would give our grape varieties a strong personality in order to produce unique wines.

In the middle of two hundred hectares of this Trujillo estate that the Greeks already cultivated in ancient times, stands the building that houses our winery, one of the most advanced in our country.

PIONEERS

The influence of irrigation on the aromatic capacity of the grape and the study of the aromatic potential of the grape to determine the date of harvest. Collaboration with the Laboratory of Analysis of Aroma and Oenology, Faculty of Sciences of Zaragoza.

Study of the influence of sequential inoculations of non-Saccharomyces yeast (torulospora) with Saccharomyces on the revelation of aromas, in collaboration with the Faculty of Oenology of Bordeaux and SARCO.

Measurement of sap flow for plant water knowledge, in collaboration with E.N.S.A. Montpellier and the University of Berkeley.

Selection of native yeasts, in collaboration with the E.T.S.I.A. of Madrid
