Celler la Muntanya produces Paquito el Chocolatero, sourced from the vineyards of Beniarrés, Alcocer de Planes, Cocentaina, Gorga, and Muro: 2.32 hectares of soils composed of various marls and clays, along with fragmented limestone.
Paquito el Chocolatero pays tribute to the renowned pasodoble and its composer. The Garnatxa Tintorera used in this wine comes from the micro-vineyard belonging to the son of the composer, Gustavo Pascual.
This wine is crafted from a blend of 30% Monastrell, 45% Garnatxa Tintorera, 25% Giró, 5% Syrah, and 5% Bonicaire, obtained through manual harvesting, with each grape variety undergoing separate vinification and aging.
- Monastrell grapes: aged 8 months in 500L French oak barrels.
- Giró grapes: aged 8 months in 500L French oak barrels.
- Garnatxa Tintorera grapes: aged 6 months in a 4,000L vat.
