More information Ad Gaude 2023 Wine
Ad Gaude is the first wine from Alicante made with the Albariño grape variety.
Ad Gaude is made with Albariño grapes from vineyards in Alicante that are over 20 years old.
The Harvest
The harvest has been carried out at its optimum ripening point to achieve aromatic complexity. The grapes are harvested in 15 kg perforated boxes in order to respect the fruit as much as possible at dawn.
Elaboration and ageing
On arrival at the winery, the boxes are emptied directly into the pneumatic press to carry out a gentle direct pressing and thus respect the qualities of the product as much as possible.
After racking, the must ferments at 16ºC with indigenous yeasts in stainless steel tanks and another part in oak barrels.
Once alcoholic fermentation is complete, the wine is aged for 10 months exclusively in stainless steel tanks on its whole lees to achieve greater complexity, character and ageing power.
