Selection of Macabeo parcels for their freshness (acidity) and aromatic potential in September.
The grapes are cooled to 10°C to carry out pneumatic pressing, using only the free-run juice (60% yield).
Cold settling and clarification without the addition of fining agents. Controlled fermentation at 16–18°C for 15 days.
After blending (coupage) the different base wines, bottling for the second fermentation takes place in the first months of the year. The second fermentation and ageing are carried out in our cellars at 16°C.
Ageing on its lees for 18 months.

Tasting Notes
Pale straw yellow colour with fine bubbles. Citrus and apple with hints of floral and fine bakery aromas. Nice on entry to the palate, the cava is well-built, with well-balanced carbon dioxide and a lovely creamy finish.
