Careful winemaking and gentle dealcoholisation
The harvest takes place in early September, at the precise moment when the grapes express their full aromatic potential. After careful selection, clean and fresh musts are obtained and gently fermented at 16 °C.
This temperature control helps preserve the fruity and floral character of Moscatel. Once fermentation is complete, the wine undergoes a delicate dealcoholisation process, carried out with the utmost respect for its identity.
