The Fondillón Rafa Cañizares Solera 1982 is a historic wine produced in Salinas, Alicante, following the traditional methods that have given fondillón its prestige over the centuries. This is a very limited release, corresponding to the 2025 saca, with a total production of just 300 bottles.

This fondillón originates from a solera established in 1982, kept alive for decades through a carefully managed system of criaderas. It is neither recreated nor reinterpreted. It is the direct result of the passage of time, balancing patience, craftsmanship and prolonged oxidative ageing.

A wine deeply rooted in the history of Alicante

Fondillón forms part of Alicante’s winemaking heritage. It is a dry, long-aged wine, produced without fortification and developed naturally through the concentration of the wine and the gradual action of oxygen over many years.

Rafa Cañizares revives this style with a respectful and honest approach. There is no attempt to modernise fondillón or adapt it to current trends. The aim is to preserve its original identity, the very character that made this wine a historic benchmark among Spain’s long-aged wines.

Solera established in 1982

The foundation of this wine is a solera established in 1982. Since then, the wine has aged continuously using the traditional solera and criaderas system. This method ensures a consistent sensory line, integrating wines of different ages within a single structure.

Each saca is highly limited and carefully controlled. The 2025 release respects the balance of the solera, drawing only a small portion of wine for bottling. This process guarantees the continuity of the system and the coherence of the profile year after year.

Oxidative ageing in chestnut casks

Ageing takes place entirely under oxidative conditions, in chestnut casks with a capacity of 1,500 litres. This wood, traditionally used in the region, provides gentle and constant micro-oxygenation, distinct from that of oak.

Chestnut respects the character of the wine and encourages slow evolution, marked by concentration, stability and aromatic complexity. Over decades, the wine develops at its own pace, refining its structure and defining its identity.

Very limited production

Total production for this saca is limited to 300 bottles. This figure reflects the artisanal nature of the project and absolute respect for the balance of the solera. The system is never forced, nor are volumes increased.

Each bottle represents a tiny fraction of a wine that has required more than forty years to reach its current state. This limitation makes Fondillón Rafa Cañizares Solera 1982 a truly singular wine within the Spanish wine landscape.
