Sofía Cañizares Brut is Exclusively Produced from Organic Vineyards Using Macabeo and Chardonnay Grapes
The production of Sofía Cañizares Brut involves extracting the best from each variety separately through a skin maceration at a very low temperature to enhance the varietal aromas.
The first fermentation of the free-run juice from each variety is carried out separately under strict temperature control at 16°C.
Following the blending, it is bottled with tirage liquor to undergo a second fermentation, foam formation and aging in the bottle for at least 12 months, also at a low temperature to refine the bubbles and preserve the varietal aromas obtained during the earlier maceration.
It is bottled with a dosage liquor made using the base wine itself, which is key to maintaining the aromatic profile of the wine.
The result is a cava with a fresh, floral character, abundant in white fruit, notes of Mediterranean herbs, and subtle hints of pastry and butter from its aging in the bottle. On the palate, its bubbles are gentle and fragrant. It offers a fresh, harmonious, and balanced mouthfeel, lingering in the aftertaste.
