Ingredients for Gifiti
- Chamomile
- Cloves
- Palo de hombre
- Anise
- Allspice
- Rum or aguardiente
Preparation:
- Place all ingredients except the alcohol in a container
- Crush the herbs and flowers with a mortar until broken down
- Add the alcohol of your choice, either rum or aguardiente
- Transfer the mixture to a bottle or glass container with a lid
- Leave it fermenting in the sun, or buried in earth, for at least two weeks
- After those two weeks, the Gifiti is ready to drink
Because Gifiti is made at home rather than under a single commercial label, each family or community version may vary. Some preparations emphasise the bitter herbal profile, while others lean more toward rum sweetness or the spicy warmth of cloves and allspice. The text insists on moderation, since the drink has an alcoholic base and is usually consumed in very small glasses rather than as a party drink.
The artisanal preparation also explains why it is tied to Garifuna identity: the plants, roots and maceration time are part of oral knowledge, and the bottle itself often becomes a living infusion where herbs remain visible inside.
