Traditional winemaking with barrel fermentation
The vinification of Sericis Viognier follows a carefully managed process. After vineyard selection, fermentation takes place in oak barrels, where the wine remains for four months.
During this time, weekly bâtonnage is carried out. This work with the lees adds volume and texture, giving the wine greater complexity and a creamy mouthfeel.
It then spends two further months on its lees in stainless steel tanks. This stage refines the wine while preserving the natural freshness of the variety. It is then bottled, ready to evolve further.
