Santaren is born of silence, of the dark and calm maceration of spices and bushes, of the meeting of the Mediterranean, the Caribbean and the Demerara River.

In Thessalonica, a city of Macedonia, it happened that Saint Irene, a young virgin and martyr, was condemned to die at the stake for hiding the sacred books, against the prohibition of the emperor. Exhorted by the authorities to worship the gods, the young Irene refused, for she would be lucky enough to fall into hell.

She was locked up for days in a house of vice, while two guards watched over her door, but heaven protected her virtue. Finally an arrow pierced her throat while she was burned alive in a lupanar, by order of the prefect Dulcecio, under whose command her sisters Agape and Quionia also suffered martyrdom.
