From a small two-hectare plot nestled in the Sierra Umbría, at an altitude of 600-700 meters, Sofía Cañizares Giró is born. The Giró variety, native to the region, has exceptionally adapted to the Mediterranean environment, developing a unique identity.
The sandy, nutrient-poor soils naturally limit production per vine, resulting in small but exceptionally high-quality clusters. Its thin skin and naturally high acidity allow it to retain remarkable freshness, offering a vibrant and authentic expression uncommon in the region.
Harvesting takes place in September, focusing on preserving the fruit-forward character of the variety. The grapes, chilled for 24 hours prior to fermentation, are then vinified at low temperatures in stainless steel tanks, ensuring the purity of fresh red fruit aromas.
To refine its expression, the wine is aged for three months in small porous concrete tanks, allowing for subtle micro-oxygenation without compromising its freshness. This short aging process preserves the true identity of Giró, staying true to its terroir and enhancing its lively character.
