The Inusual project seeks to explore paths rarely seen in small-production wines. In this case, the winery works with Moscatel grown in Mediterranean plots. The aim is to obtain a dry, vibrant wine with tension, while preserving the floral essence so characteristic of Moscatel.

Whole-cluster fermentation to add structure
Fermentation takes place spontaneously with natural yeasts. The entire bunch is used—skins, pulp and stems included. This method is key in brisado wines, as it adds structure, texture and aromatic complexity. Maceration continues until fermentation is complete, allowing the wine to gain character without losing the agility the winery seeks.
Afterwards, the wine spends two months in amphora. These vessels allow gentle micro-oxygenation that refines the wine and smooths the texture without adding woody notes. The result is a balance between personality and freshness, a trait we highly appreciate in wines of this style.
