The true history of Vivanza wines, lies within the lands where vineyards are located.
The grape varieties are processed independently, each one at its optimum moment of ripeness. They undergo pre-fermentation maceration at 10º C to obtain greater aromatic complexity, and then the free-run must is obtained without pressure and immediately begins fermentation at a controlled temperature of 15º C.
Both varieties are fermented in stainless steel vats with inhibition of malolactic fermentation. The blending of the three wines provides the aromatic personality, smoothness on the palate and longevity of this wine
