Finca Los Hoyales comes from the oldest vineyard in the plot.
Finca Los Hoyales comes from the oldest vineyard in the plot, with vines planted 53 years ago in a land that has been displaying its singular character ever since we began making wine in this estate. This vines give few grapes, what result in small and careful productions.
Winemaking
Harvested by hand with selection of clusters in the vineyard. Gentle stemming and fermentation in oak casks. Malolactic in new French-oak casks.
Subsequently, the wine remained ageing on the lees in the cask for 22 months with no racking, only occasional gentle stirring.
Then the wine was bottled without filtering and left to rest for a further 10 months until released for sale.

| Vintage | 2012 | Tasting Notes | Clean dark cherry colour with maroon edges. A wide range of aromatic notes open slowly and gently, touching all the spectrums. The fruit trees, in the black fruit range, such as very ripe plums and the spicy ones, with some nutmeg, clove and leaf.
