Created from Pinot Noir and Chardonnay grapes with Chapenoise method.
Champenoise method from the Mediterranean mountain, at more than 1000 meters of altitude.
Edoné Gran Cuvée Extra Brut is coming from their isolated and ecologic vineyard.
The selection is made parcel by parcel, vinification is traditional, and ageing is made in oak barrel. After the light ageing in barrel, the second fermentation takes place for a minimum of 36 months in our underground cellar at 12 degrees, away from any lights.
