Porto Calem Ruby is crafted by blending wines from different harvests, with varying levels of maturation in stainless steel vats and oak barrels for a minimum of 3 years. The result is a rich and aromatic wine with the perfect level of sweetness.
Vinification
The grapes, handpicked at the optimum time, are destemmed, crushed, and turned into wine through a careful maceration process to extract their color, tannins, and aromas, enhanced by constant agitation during fermentation.
This process takes place in stainless steel vats at a controlled temperature (between 28-30°C) until the desired sweetness level (baumé) is reached. At this point, grape brandy is added to create the final fortified wine.
Pairing
Served plain, chilled, or on ice, it is excellent as an aperitif, but equally delightful at any time of the day. Perfect to pair with cheese or chocolate-based desserts.
