Casa El Puntal Olive Oil is an Extra Virgin Olive Oil produced in Alicante by the winegrower Rafa Cañizares. It originates in Salinas, made from a carefully selected harvest of olives sourced from just 5 hectares of Picual olive groves. This is a monovarietal EVOO with a clear objective: to express the greenest, most intense and expressive side of the Picual variety through early harvesting and precise production.

Origin and project philosophy
This olive oil is produced entirely in the province of Alicante, in the area of Salinas. The project is rooted in an artisanal and carefully controlled vision, where every decision directly influences the final result. The aim is not volume or standardisation, but expression.
The estate, covering just five hectares, allows for constant monitoring of the olive grove. This direct control over cultivation ensures homogeneous raw material harvested at its optimal point, a key factor in achieving an EVOO with high aromatic intensity.
Early harvest in November
The harvest takes place during November 2025, a key moment for the Picual variety. The olives are selected while still green, when they offer their maximum aromatic potential and a high polyphenol content.
Harvesting is carried out using carefully controlled mechanical methods. The olives never come into contact with the ground. Once picked, the fruit is immediately transported to the mill, minimising waiting time before processing.
This early harvest is responsible for the vibrant green profile and pronounced pungency that define Casa El Puntal, as well as its excellent natural stability.
Production and cold extraction
Once at the mill, the olives are milled immediately. Extraction is carried out exclusively using mechanical processes, resulting in a first cold-pressed oil with strictly controlled temperature.
This process preserves the aromas, natural antioxidants and nutritional properties of the oil intact. There are no aggressive treatments or corrective processes. The quality of the fruit takes centre stage.
After extraction, the oil is filtered. This step ensures a clean, bright and stable EVOO, removing suspended particles that could affect its profile over time. It is then stored in stainless steel tanks, protected from light and oxygen, until final bottling.
Pure Picual variety
Casa El Puntal is a 100% Picual EVOO. This variety is known for its intensity, structure and high concentration of phenolic compounds. In this case, early harvesting further enhances its vegetal character.
The result is an oil with a firm personality, designed for those who enjoy oils with presence, strength and a clearly recognisable profile.
Sensory profile
Visually, it shows a very intense and luminous green colour, typical of early-harvest oils. This appearance already suggests freshness and aromatic richness.
On the nose, it is intense and expressive from the outset. Green aromas of fresh grass, green tomato and olive leaf emerge, accompanied by fig tree nuances. The overall impression is fragrant, clean and sharply defined.
On the palate, it delivers a powerful and well-structured entry. The bitterness is medium to high, and the pungency is pronounced and progressive, more intense than is usual for Picual. This sensation is a direct reflection of its richness in polyphenols. The texture is fluid and balanced, with a persistent and refreshing finish.
Use in cooking
This EVOO is particularly suited to raw use. It works exceptionally well with vegetables, salads, pulses, toast and dishes where the oil plays a leading role.
