At Santa Catalina del Mañana, they select clusters from old vineyards, where scarce rainfall and limestone soils concentrate the sugars and character of the variety.
After careful maceration, the base wine of Diávolo Sangría is enriched with natural fruit extracts —oranges, lemons, and raspberries— and a touch of carbonation to achieve a sparkling balance between sweetness and acidity.
