Elyssia concentrates all the fruit of Pinot Noir

The Elyssia Pinot Noir cava integrates the true essence of Pinot Noir grown in the Penedès. With an intense pink colour, it has fruity sensations on the palate, making it tasty and sweet, with a refreshing acidity and a long finish with ripe fruit flavours.

The grapes come from the Mas Bernich estate, located in the municipality of Masquefa in the Alt Penedés region, and give it elegance and fruity sensations. The Elyssia Pinot Noir is aged for 18 months, enough time to get the best out of the Pinot Noir.

The variety used to make the base wine for this cava is Pinot Noir. The Pinot Noir variety is harvested in the second half of August. This variety is characterized by its low tannic structure, which provides medium body and elegant, fruity sensations in the mouth. The grapes come from our Mas Bernich estate, located in the municipality of Masquefa in the Alt Penedès. The Mas Bernich estate consists of 92 hectares of which 15 are Pinot Noir, planted on trellises with the Royat-Double training system. The soil is sandy-clayey, with an average annual rainfall of 550 l/m2. This variety was pruned to 27,000 buds per hectare, to limit its production to 6,500 kg/ha and to give the aroma and structure typical of this appreciated variety to the base wine.

Vinification Pinot Noir

The grapes are harvested mechanically at night to preserve the sensory characteristics of the grapes. Subsequently, maceration is carried out in a pneumatic press for 5-6 hours, followed by static racking to clarify the must before fermentation in stainless steel tanks at a temperature of 16-18ºC with our own selected yeasts.
