A winery founded in 2004 by Jorge Ordoñez and Rafael Cañizares, two of those responsible for the international Spanish wine boom of the 1990s.
When the whole world associated Spanish wines with a small list of Riojas of dubious quality and cheap sherries, these two visionaries recovered old abandoned vineyards in unknown areas, such as the Jumilla DO. At the same time, Jorge Ordóñez reinvented the business of exporting Spanish wines, creating new types of clients and making the world known aware of the potential of our wines.
The differential seal of the winery is the handcrafted elaboration of autochthonous Spanish varieties coming from very old vineyards, less productive, but that provide more quality in every sense.
Currently, Bodegas Volver produces wines under the DO Jumilla, Castilla la Mancha and Alicante.
The winery is located southwest of the city of Salinas and northeast of Pinoso.
Triga
The grapes come from 5 vineyards, one of them planted in 1925. Four monastrell vineyards located in the Sierra de Salinas, Umbria and La Sima. The Cabernet Sauvignon vineyard is in the Sierra de Salinas and was planted in 1981. Heigh above sea level: 600-750 meters. Fossilized limestone soils with the top layer full of limestone.
Very dry year with high temperatures with great temperature fluctuations between night and day, optimal harvest due to the scarce rainfall.
Use of autochthonous yeasts. Only the oldest vineyards are used for the production of Triga. The vineyards are carefully watched in all phases and processes, pruning, flowering, fruiting, veraison, ripening and harvesting and only the best parcels of land are selected. These vineyards have very low yields, around 1 tonne per hectare. The best bunches are selected in the vineyard and later in the selection table of the wine cellar. After a maceration in 5,000 kg tanks, it goes to vertical press.

Tasting Notes | Opaque purple. Black and blue fruit smells are transformed into notes of liquorice, Indian spices and floral oils. Tasty and long, it has a good acidity that gives it elegance. In the mouth, sweet blueberries and gooseberries dye the palate with persistence in a spicy and concentrated ending. |
