Tarima Hill comes from old monastrell vines and is aged in French oak barrels for 14 months.
Founded in 2004 by Jorge Ordoñez and Rafael Cañizares, two of those responsible for the international Spanish wine boom of the 1990s.
When the whole world associated Spanish wines with a small list of Riojas of dubious quality and cheap sherries, these two visionaries recovered old abandoned vineyards in then unknown areas, such as the Jumilla DO. At the same time, Jorge Ordóñez reinvented the business of exporting Spanish wines, creating new types of clients and making the potential of our wines known to the whole world.
The differential seal of the winery is the handcrafted elaboration of autochthonous Spanish varieties coming from very old vineyards, less productive, but that provide more quality in all senses.
Currently, Bodegas Volver produces wines under the DO Jumilla, Castilla la Mancha and Alicante.
The winery is located southwest of the city of Salinas and northeast of Pinoso. Tarima Hill is a product from vineyards with D.O. Alicante, one of the best known regions in the production of wine in Spain.
Harvest It is characterized by an extreme drought, with an average rainfall of about 153.6 liters per square meter. Thanks to the microclimate of the area with an altitude of 650 - 750 meters and arid and shallow soils. Poor in organic matter and full of limestone rocks. Humidity from Mediterranean breezes.
VINEYARD Elaborated with grapes from multiple vineyards located in the villages of Vinalopó Medio: Pinoso, Salinas, El Maña, Monovar ... Planted in glass between 1935 and 1970 where a traditional viticulture is carried out dry giving rise to a yield of 1.5 kg per plant.
PRODUCTION The harvest is adapted to the optimum moment of ripening of the grapes, usually in the early days of autumn. Autochthonous yeasts. Malolactic fermentation in barrel, and ageing for 14 months in French barrel.
