Paso a Paso is made with grapes from old vineyards and spent 6 months in French oak barrels
Graciano is a late-blooming variety that comes from other Spanish regions such as Rioja, but has adapted well to the climate of La Mancha. The location of our vineyards helps these grapes to achieve perfect ripening, high acidity and strong, rounded tannins. The winemaker seeks the character, structure and longevity of Graciano grapes in a balanced blend with our best Tempranillo grapes.
The Vineyard: Finca las Cruces vineyard planted in one of the highest areas of Castilla la Mancha.
Age of the vineyard: The Tempranillo plots were planted 35-45 years ago. Graciano's vineyards are approximately 10 years old.
Elaboration: The grapes are meticulously classified in the winery, fermenting in stainless steel tanks using native washings. The mololactic fermentation takes place in the tank, and then the grapes are transferred to French oak barrels for third use. Each variety is made separately.
Aging: 6 months in used French barrels.
