The estate covers a total area of 78.0526 hectares with a total of 241,651 vineyards.
The grape variety used to make the wine is Verdejo, and thanks to their harvesting system, they achieve a wine that respects the fruitiness of young Verdejo but with greater complexity, glyceric texture, and a good balance of acidity and alcohol content.
The harvesting system is primarily done by machine, which allows for greater control over the optimal moment of grape harvesting in terms of grape maturity and enables faster picking with optimized grape temperatures upon entry into the winery.
THE VERDEJO VARIETY
Made exclusively from Verdejo grapes, Palomo Cojo is a wine that meets all the requirements to be considered a wine with the Denomination of Origin Rueda, the oldest in Castilla y León.
In this incomparable landscape of stony and rocky soils, we find Verdejo, one of Spain's best white grapes, which has become almost synonymous with Palomo Cojo.
Wines produced from Verdejo grapes often have a range of colors from greenish-yellow to straw-colored. This is the case with Palomo Cojo, whose intense fruit aromas with herbaceous nuances largely explain its success.
However, this is not the only secret that Palomo Cojo bottles hold. In its production, everything is aimed at achieving the perfect balance of colors, aromas, and flavors that make this wine round and very balanced. Palomo Cojo is the perfect pairing for sauced and baked fish, mushroom and asparagus risottos, salads, and sushi. |
