Pago de Pelde is the result of the peculiarities of a unique site that gives the wine its exceptional character.
A vineyard whose particular characteristics set it apart from the rest is called a pago.
Harvesting is done by hand and in boxes, due to the abrupt and rebellious characteristics of the land. After a selection of the grapes in the winery, the first cold maceration is carried out at 5℃, in stainless steel tanks for three days. In this way, the sweet tannins are extracted to the maximum, as well as the colour and the fruit and mineral aromas.
After the maceration, a malolactic fermentation of 30 days is carried out at a controlled temperature of 26 ℃- 28℃. During these days, pumping over is done daily following the Delestage method.
This wine is transferred to 225 or 300 litre French oak barrels of medium toast where it is aged for 12 months to reach all its complexity and mineral richness together with its unique and aromatic bouquet.
