Casa Armando Guillermo Prieto is located in the Mexican state of Oaxaca. It is the largest distillery in the country, with the latest cutting-edge technology. In traditional mezcal production, hearts of the maquey plant are placed underground and roasted using layers of hot stones and agave leaf wrappings. This process does not allow smoke to escape, so the maguey hearts, or “pinas,” are given their distinctive smoky flavour.
Zignum Mezcal however uses only green agaves—known as espadin—a long, pointed-leafed agave grown for a minimum of eight years before it is plucked from the earth and separated from its pineapple-like core (Jima).
Then rather than the traditional mezcal production, Zignum extracts the juices of the espadin hearts before steam-cooking them above ground, much like tequila, which eliminates the smoky taste and reduces the levels of methanol and saturated alcohols. This results in a silky smooth spirit with a clean taste that allows consumers to fully appreciate the flavour of the green agave in its true form.
