Using his ancestor récipe, Saúl Rojas Gutierrez has been making Premium Mezcal for 40 years, by knowing knows exactly how to combine aromas and flavors.
Amor de Agave is produced in smalls batches with traditional methods. Crafted at a palenque in Matatlán. Oaxaca, by a third generation grower and distiller.
The agave plant- also kwown as maguey- can grow for 25 to 30 years, but the one we use to make mezcal is harvested for a periodo f 6 to 7 years. Then, the plant’s spines are cut and the remaining heart- called pinneapple- we use it for the manufacture of mezcal.
The next step is to cook the agave for four days. Then, the agave roasted is ground an a rock mil, turned by a horse. When the agave is finished being ground, it is placed in a wooden barrel with wáter and allowed to ferment for several days. After fermantation, the mixture should be distilled. In the second distillation, the Mezcal should be shaken to obtain the desired degree of alcohol. Finally, it is bottled and labeled wiht all the love.
Amor de Agave is produced by one of the most important and recognized families in Oaxaca using traditional artisanal methods.
It is made of 100% Agave espadín and its natural smoky flavor is derived by cooking the best agave plants in a conical Stone oven on mesquite and ocote, Woods native to Oaxaca. These ingredients give to Amor de Agave its particular carácter and unique flavor.
