The true history of Vivanza wines, lies within the lands where vineyards are located.
The grape varieties are processed independently, each one at its optimum moment of ripeness. They undergo pre-fermentation maceration at 10º C for 5 hours, followed by static decanting. Fermentation takes place at a controlled temperature of 15º C in stainless steel vats, with inhibition of malolactic fermentation.
