La Pócima Apple Gin is the premium gin of the XVI century Galician witches. It has triple distillation, and has been elaborated in Galicia by distillation masters, using small copper stills.
La Pócima Apple Gin was created mixing a combination of carefully selected botanicals that have been incorporated to a distillation of a high quality cereal in a slow process of distillation at a low temperature in order to preserve the aroma, the flavour and the nature of the botanicals.
The second distillation is made in copper stills where, previously, a wine of the variety albariño has been fermented, what gives to the product that Atlantic touch so different and pleasant.
After being several days at rest, the following step is the product hydration with the Galician water at 40ºC, and it is at rest again, before being bottled, and this allows a perfect mixture of flavours and aromas.
The botanicals that are chosen to elaborate this gin, give to the gin flavours from different parts of the world:
- The juniper and the angelica root, that are characteristically from the Centre of Europe.
- The orange and the lemon skin, add to the gin a Mediterranean touch in the flavour and in the aroma also.
- The African coriander give to the product its herbaceous flavour.
- The apples provide a striking color and freshness.
