Crafted from a carefully selected blend of white grape varieties from the Atlantic coast, this wine is the result of the expertise and passion of HABLA’s winemakers. Its unique essence is shaped in two phases: a first fermentation in the winery and a second, truly exceptional, fermentation at the bottom of the sea. It is in this underwater environment that the wine develops its unmistakable character, with a delicate saline touch that enhances its freshness.
This pioneering underwater fermentation system, patented in Spain, transforms the wine’s morphology, giving it unique organoleptic properties. Sealed in hermetic tanks resting on the seabed, the natural carbon dioxide generated during fermentation remains trapped within the wine, subtly integrating into its structure. This process gives it a gentle effervescence, adding vibrancy and complexity to its profile.
When it resurfaces, HABLA DEL MAR… is filtered and bottled as quickly as possible to preserve its freshness and that distinctive sparkling touch that makes it so unique. When observing the wine in the glass, we are greeted by a brilliant lemon-yellow colour with subtle steely reflections. This radiant hue is the first hint of the vibrancy and freshness that awaits, reflecting the unique origin of its fermentation beneath the sea.
With a delicate fragrance, its aroma evokes the essence of the ocean breeze, reminiscent of the salty air that lingers on the skin. An initial saline note, reminiscent of seafood, gives way to the vegetal character typical of certain algae species. These marine nuances intertwine with the ripe sweetness of quince and the floral delicacy of chamomile.
