It is an ideal wine to discover the internationally acclaimed wines of Peter Sisseck.
Dominio de Pingus was born in 1995 when its owner, the Danish Peter Sisseck, an agricultural engineer and oenologist born in 1962 in Copenhagen (Denmark), who has been living in Spain since 1990, decided to buy a small vineyard with very old Tinto Fino vines.
The vineyard, with its sandy soils in the very heart of Ribera del Duero, soon yielded extraordinary fruit, which Sisseck has pampered, using biodynamic methods and placing himself on the market with the most exclusive and expensive wine of all those produced in Spain.
The artisan production and the low production, allow them to take care of the great quality of the final product. The secret of these wines can be found in the old Tinto Fino vineyards that are cultivated on only five hectares and in a very controlled selection.
Destemming is carried out manually and patiently, removing the ripest grapes from each cluster. The subsequent fermentation is completely natural; a practice that allows better maintenance of pigmentation and allows the wine to retain its fruity aroma and taste. The process of maceration and fermentation takes about twenty days and then the wine is transferred to the barrels for malolactic fermentation.

Tasting Notes | Cherry colour with violet tones. Dense and rounded tear. Fragrant and intense nose. Where the good maturation and selection of the grape is pronounced. Aromas of very ripe fruit, both red and black, with floral tones. Later on, aromas of aging, toast, balsams, eucalyptus, some empyreumatic touches such as coffee or cocoa flow. Sweet spices and some vegetable tones. In the mouth the entrance of this wine surprises, a sweet but voluminous point at the same time. It is one with a tamed tannin and an unctuousness that pleases the palate. Long and juicy finish. |
