Don Papa Sherry Cask it is a column-distilled molasses-based rum, first aged for four years in American Oak ex-bourbon casks, followed by 18 months in four different types of Sherry Casks: Fino, Pedro Ximenez, Cream, and Palo Cortado. The rums in these four casks are then carefully blended to produce a unique limited edition rum, unfiltered and bottled at 45% ABV.
Like all other Don Papa rums, the Sherry Cask Finish is distilled on the island of Negros where the rich volcanic soil and exceptionally warm and humid climate bring richness to the sugarcane on Mount Kanlaon. The cane is then crushed in the local sugar mills and the resultant molasses, known locally as “black gold,” are then sent to the distillery in Bago.
