De Chanceny is emblematic of our know-how in producing fine, sparkling Loire wines according to the Méthode Traditionnelle, developed since 1953.
A superb selection of Chardonnay and Chenin blanc on limestone, a careful manual harvest, a selection of pressed hearts, a maturation of more than 4 years in our tufa chalk galleries, a refined expedition liqueur, have allowed us to create "Imppétus", a vintage full of richness, elegance and character.
Selection of plots on ripe fruit profiles. Manual harvesting. Gentle pressing and fermentation at a cool temperature (18°C) allowing a good conservation of the aromas. Selection of press cores. Second fermentation in bottle according to the Traditional Method.
The minimum 48 months of storage on slats before disgorging provide an incomparable bubble fineness.
