Cesilia Rosé is the best-selling Rosé wine in Alicante
Cesilia Rosé was the first wine elaborated in Alicante in the "onion skin" style and has created a brand name and a following to such an extent that it is currently the best selling rosé wine in Alicante.
Harvest
The harvest was carried out at the optimum point of ripeness to achieve aromatic complexity. The grapes were harvested by hand early in the morning in 15 kg perforated boxes in order to respect the fruit as much as possible.
Winemaking and ageing
The bunches are transported directly to the pneumatic press where the free-run juice is gently extracted and then cleaned by a light static clarification process.
After this clarification process, the must undergoes alcoholic fermentation at a controlled temperature of 15-17ºC in stainless steel tanks.
Then, Cesilia Rosé remains on its fine lees, with periodic "batonnages" to achieve more volume and a silky effect on the palate.

Tasting Notes | Pale pink colour with salmon reflections, clean, bright and crystalline.
Expressive and different on the nose to any conventional rosé. Aromas of ripe fruit and some floral touches gradually give way to sweet essences with hints of pastry and notes of smoke and fresh grass.
The palate is juicy, fresh and singular. There are notes of serious wine due to its incipient astringency and at the same time of youth due to its prominent acidity. It is unctuous and full-bodied on the palate. |
