Cesilia Roble is made with a blend of Monastrell, Petit Verdot and Cabernet Sauvignon.
Cesilia Roble is made from a blend of grape varieties from the Casa Sicilia estates.
The grapes are harvested by hand and in small boxes of 15 kg in order to respect the quality and integrity of the grapes as much as possible.
Winemaking and ageing
Alcoholic fermentation is carried out with indigenous yeasts to respect the typical aromas of the grapes in stainless steel tanks at controlled temperatures.
A gentle maceration of the skins is carried out, appropriate to the type of wine to be obtained, avoiding an over extraction of tannins and obtaining a pleasant and harmonious wine.
After malolactic fermentation, the wine remains in oak barrels for six months.
Ageing potential
The evolution of the wine can reach 4 to 5 years.
