The casks selected for aging the whiskey are also esential, so they keep close ties with cask-makers in Spain, Portugal and America. Once shipped to the Bushmills distillery the casks are filled and left to mature, working their magic to give the whiskey it's enjoyably rich, mellow yet distinct flavour.
Matured in three different woods. Oloroso sherry and bourbon cask are used for the first 16 years, before finishing in port wine barrels.
This unusual maturation gives the 16 year old its ruby red colour and robust personality.
Toffeee and sweet spice are followed by praline, honey and toasted nut aromas and deep finish with jammed berries and dark chocolate.
