Bonito del Norte in Olive Oil N. 51 La Brújula, is the most prized of the tunas.
It is made with small fresh bonitos, cleaned by hand and cut with a knife, following a careful artisanal process.
What we know as bonito corresponds to the Bonito del Norte, a fish caught in the waters of the Cantabrian Sea. It is called 'Thunnus alalunga' and is also known as albacore or white tuna, a name that causes confusion and is due to the color of its flesh.
Characteristics of Bonito del Norte
Bonito del Norte is the scarcest and also the most prized tuna: Its size varies between 30 centimeters and one meter, with a weight close to 15 kilograms.
The dorsal part of the body is of a strong blue color, almost black, and the ventral part white. It is easy to recognize by its central fin, which is longer. It measures more than two-thirds of the length of the fish.
Bonito tends to have a tastier flesh, a softer texture, and the clearest color of all.
It is a fusiform, elongated, tight fish, with an exterior between blue and metallic, and stands out for its large eyes and because its back is noticeably darker than its belly, in addition to having tiny scales that make it a fish that is not usually scaled.
