Vineyards
Sourced from 16 vineyards located in the towns of San Asencio and Huércanos, winemaking regions in Rioja Alta, very close to Fuenmayor.
Winemaking
Azpilicueta Instinto ferments at a controlled temperature to enhance and preserve its fruity character. After the alcoholic fermentation is completed, it undergoes malolactic fermentation, which takes place in new American oak barrels with a light toast.
Once finished, it is racked into single-use French oak barrels, where it remains for 5 months. Following this process, it is bottled and left to rest in the cool and dim environment of the winery until it is labeled.
