Elaboration: We select the hawthorn with a low production. Through maturation following-up, we determined the vintage time. It is done in boxes and the grapes are immediately cooled with carbonic pellets, which help us to maintain an inert atmosphere and at the same time, to reduce the use of sulfites. It is carried to the winery, where it is cleaned and pressed before moving into fermentation tanks with a temperature around 10 º C, and thus keep at least 10 hours. After this time, the grape became pressed with pneumatic, obtaining a very clean unfermented grape juice of a large quantity of grape flavours. Then the fermentation starts and we keep the temperature around 14 º C. Once it is made, racking and filling tanks processes take place to keep the wine without air, and pass it to the bottling process as the final step.
Tasting notes: White wine with cleaned greenish colour, bright with steely trim, high intensity with floral and tropical fruits aromas. The beginning is sweet in the mouth with a touch of acid to be soft at the end and return to recall the fruity aromas. Persistent.
Serving temperature: serve it between 7º - 8ºC, in fine crystal glass.
