The Quiles family's ties with the world of wine strech all the way back to 1780. For generation after generation they have maintained the close links binding their raison d'être and personality to the creation of the high quality wines that alicante is famous for, highlighting, in the process, the sheer excellence of their grape variety: MONASTRELL.
The FONDILLON is the NOBLE WINE of Alicante, understanding as NOBLE WINE in the sense that it reaches a high alcoholic graduation of a totally natural way, without fortification.
It is the wine proceeding from the main Alicante variety: the MONASTRELL, variety that can be harverted late due to a moderate climate, so that the overripe of the fruit is provoked in the own vine-stock to obtain the grains in its maximum expression of aromas, colour and flavour.
Therefore this is a wine ensued from the combination of the factors climate and variety MONASTRELL, that together with the characteristics of the soil and the posteior process of elaboration and ageing in "Escala de Soleras", result in this wine unique in the world that has been on tables of kings and illustrious prominent figures of the History.
RASPAY RESERVE
Made from low-yielding 100% Monastrell grapes grown in this exceptional winemaking region (each vine yields a mere 1 kg, which partly explains the unique quality of this wine) and produced in small batches using traditional techniques before being aged in old oak barrels an then, for a longer period, in bottle.
An intense, jammy and richly wood bouquet. In the mouth it is mellow, rounded, mature and full-flavoured with hints of old wood, spices and ripe fruit.
Ideally suited for lamb, stews, rice dishes with meat or vegetables, pork and roast meat.
