The Quiles family's ties with the world of wine strech all the way back to 1780. For generation after generation they have maintained the close links binding their raison d'être and personality to the creation of the high quality wines that alicante is famous for, highlighting, in the process, the sheer excellence of their grape variety: MONASTRELL.

The FONDILLON is the NOBLE WINE of Alicante, understanding as NOBLE WINE in the sense that it reaches a high alcoholic graduation of a totally natural way, without fortification.

It is the wine proceeding from the main Alicante variety: the MONASTRELL, variety that can be harverted late due to a moderate climate, so that the overripe of the fruit is provoked in the own vine-stock to obtain the grains in its maximum expression of aromas, colour and flavour.

Therefore this is a wine ensued from the combination of the factors climate and variety MONASTRELL, that together with the characteristics of the soil and the posteior process of elaboration and ageing in "Escala de Soleras", result in this wine unique in the world that has been on tables of kings and illustrious prominent figures of the History.

There are countles facts and stories confirming the historical relevance of this wine including one related by the Duc de Saint-Simon -the official chronicler of the court of the "Sun King", Louis XIV of France- in his memoirs entitled, Journal de la maladie du Roi. Here the duke tells of how the king enjoyed some sponge cakes washed down in Fondillón a mere four days before his death, an anecdote that Saint-Simon used to show the exceptional treatment the king received.

The Fondillón is one of five only wines in the world recognized with own name.

Fondillón Great Reserve Solera of 1948

This NOBLE wine is not fortificated and as the grapes are left to hang on the vine late into de season it is naturally very high in alcohol, a factor that helps bring out the full aroma and flavour of the MONASTRELL grape.
These qualities are refined during the fermentation process before the wine is aged in their authentic and traditional local Monóvar oak barrels using the solera fractional blending and maturation system to produce, after several years, a uniquely outstanding wine know through the ages as FONDILLON - a highly valued trasure in palace wine cellars for over five centuries.

Deep mahogany colour with orangey hues that betray its red-wine origins. An intense raisiny, balsamic and fine-wood bouquet typical of FONDILLON. In the glass this wine reveals the spotlessly clean, toasted, nutty and raisiny nuances one would expect of a lenghty ageing process. A slightly sweet attack balances perfectly with a crisp acidity and toasted tannins that are result of lenghty ageing in the barrel.

Excellent as an aperitif or with desserts or after dinner with dried fruits, nuts, cakes, etc.
